How this piece is made

  • Sheets of raw copper before forming

    The sheet

    Copper arrives flat, in 1.5, 2 and 2.6 mm. The gauge is chosen before anything is cut, and it is what the pan will cook like for the rest of its life.

  • Planishing hammers on the workshop block

    The hammer

    Where a shape needs tightening the metal is planished by hand. The marks left behind are the record of that, not a finish applied afterwards.

A charlotte is built, not baked — lined with sponge fingers, filled, chilled and turned out whole. The slightly flared wall is what lets it release in one piece. 18 cm across, 10 cm deep, 2.1 litres.

A charlotte is built, not baked — lined with sponge fingers, filled, chilled and turned out whole. The slightly flared wall is what lets it release in one piece. 18 cm across, 10 cm deep, 2.1 litres.

Mauviel bakeware is black steel with a non-stick coating inside and out, 1 mm through the whole mould — professional gauge, not supermarket tinplate. Black steel takes heat quickly and gives a properly browned base rather than a pale one, which is the difference between a tart shell that holds and one that goes soft under the filling.

Manufactured without PFOA. Oven use only; not for the hob. Hand wash — dishwasher detergent attacks the coating.

Care

  • Hand washing is recommended for every Mauviel1830 piece. Detergents attack the coatings and the aluminium inside a multi-ply body.
  • On induction or ceramic, never go past two thirds of the hob’s power. Overheating is what warps a base and makes food stick, not the pan.
