Copperbrill is what Mauviel’s own workshop uses. Nothing else is needed.
Anyone who owns copper. It is not optional and it is not expensive.
Copper tarnishes because it oxidises. It is not damage and it does not affect cooking. A soft cloth, a smear of Copperbrill, warm water, dry — under a minute, and the pan is a mirror again. Inobrill does the same for stainless steel.
The 1 litre tin at R2,390 will last a household years. The 150 ml at R500 is the sensible size for one or two pans.
The rest of the regime is simple: hand wash everything, never let detergent sit in a multi-ply pan, and never run past two thirds power on induction or ceramic. Overheating is what warps a base — not the pan being at fault.

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
