Lids

A lid made to the same gauge as the pan sits flat. A generic one rocks.

Replacing a lid, or adding one to a pan bought without.

Mauviel lids are pressed from the same material and thickness as the collection they belong to, which is why they seal properly and why the handle matches. Copper lids in bronze or cast stainless, stainless lids flat or domed, glass lids where you want to watch, and universal lids that cover several diameters within a collection.

A Mauviel craftsman at the bench in Villedieu-les-Poeles

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
