M’Passion Tôle

Black steel bakeware, 1 mm through the whole mould. Professional gauge, not supermarket tinplate.

For anyone who bakes seriously, and for the shapes you cannot improvise with a tin from a supermarket.

M’Passion Tôle is sheet steel with a non-stick coating inside and out, manufactured without PFOA. Steel takes heat quickly and holds it against the dough, which is why a tart shell baked in one of these comes out browned and crisp underneath instead of pale and soft. Thin tinplate simply cannot do that.

The range is the classic French pâtisserie shapes: cake and manqué moulds, tart rings with and without a removable base, a charlotte, a savarin, a pandoro star, and a flat plate for tarts fines. Oven only — these are not hob pans. Hand wash; dishwasher detergent attacks the coating.

  2. 2Cake Mould22, 26 and 30 cm. Steel gives a loaf a proper crust rather than a pale edge.
  3. 3Pandoro Mould 25 cmThe eight-pointed star. There is no other way to get that shape.
