Copper is the reason Mauviel exists. Everything else the house makes is measured against it.
Choose copper if you cook by watching rather than by timer, and if you want a pan your children will still be using.
Copper conducts heat about twenty times better than stainless steel and roughly twice as well as aluminium. In practice that means the pan answers the flame rather than lagging behind it: turn the heat down and the reduction slows within seconds, not a minute later when the sauce has already split. It is the only reason a French saucier will still carry copper into a kitchen full of induction hobs.
Mauviel works copper in four thicknesses and each one is a different tool. 1.5 mm (M’150) is the everyday gauge — responsive, light enough to lift full. 2 mm (M’200) is the professional gauge: heavy enough to hold its temperature when you drop cold stock into it. 2.6 mm tinned copper (M’Tradition) is the oldest recipe in the catalogue, still formed by hand. And M’6 S is the impossible one — six plies drawn as a single body, copper on the outside, magnetic steel where the induction coil can read it.
Copper tarnishes. This is not a fault and it is not a maintenance problem; it is a metal doing what metals do. Ten seconds with Copperbrill and it is a mirror again.
