M’150 S is M’150 B’s twin in every respect that affects cooking: 90% copper bonded to 10% 18/10 stainless, 1.5 mm through the body, mirror-polished, straight-edged. The only difference is the handle — cast stainless steel instead of bronze.

That is not a small difference in the room. Bronze reads warm and traditional; cast stainless reads modern and disappears against a contemporary kitchen. Stainless also runs a fraction cooler over long cooking and takes knocks better. It is also consistently a little cheaper: the saucepan starts at R3,750 against R3,950.

If your other cookware is stainless-handled, choose S. If you are building a copper kitchen and want it to look like one, choose B. Neither is the better pan.

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
