For professionals, and for home cooks who already know what 1.5 mm feels like and want more.

The difference between 1.5 mm and 2 mm sounds trivial and is not. A third more metal is a third more thermal mass, and thermal mass is what stops the pan’s temperature falling off a cliff when you add cold stock, cold shallots or a cold piece of fish. The surface stays hot enough to keep searing instead of steaming.

Everything else follows M’Héritage: 90% copper to 10% 18/10 stainless, mirror-polished, straight edge, cast bronze or cast iron handles. It is heavier, it costs more, and for a cook who works fast over high heat it is the correct pan.

A Mauviel craftsman at the bench in Villedieu-les-Poeles

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
