M’Tradition

Solid copper, tinned by hand. The oldest thing Mauviel still makes, and the last of its kind in France.

For collectors, for professionals, and for anyone who would rather have a pan repaired than replaced.

M’Tradition is 2.6 mm of solid copper, hammered and polished outside, lined inside with tin applied by hand in the traditional process. The tin is lead-free. It is the oldest non-stick surface there is and it does something no modern coating does — when it eventually wears through, the pan is not finished. Mauviel re-tins it and it starts again.

Mauviel is the last house in France still re-tinning. That is not marketing; it is why a turbot kettle from this collection is a fifty-year object rather than a ten-year one. The same workshop maintains the French presidential palace’s copper, a collection of some 900 pieces including a sauté pan stamped with Napoleon’s name and pieces dating to 1740.

The shapes here are the ones that survive only in professional French kitchens: braisières, poissonnières, turbottières, a soup station with a tap. Each is formed entirely by hand.
