M’Elite is M’Cook without the hammering: a plain mirror-polished exterior, quieter and more contemporary. Same 2.6 mm five-ply body, same 18/10 cooking surface, same induction compatibility.

The detail worth paying for is the edge. M’Elite has a bord verseur — a rolled non-drip lip that pours a sauce cleanly instead of letting it run down the outside of the pan. Anyone who has poured a reduction from a straight-edged pan onto a white cloth knows exactly what that is worth.

It is also where the range dips lowest: the M’Elite saucepan starts at R1,670, which is the cheapest route into Mauviel multi-ply there is.

A Mauviel craftsman at the bench in Villedieu-les-Poeles

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
