Service en Salle is the tableside line: alcohol-burner réchauds for flambing at the table, copper and stainless fondue sets, butter dishes, seafood trays and their stands. Mauviel has made this equipment for as long as French restaurants have finished dishes in front of the guest.

Copper holds a fondue at a stable temperature with a small flame chasing it, rather than scorching at the base the way a thin pot does. That is why these are made in copper and not in something cheaper.
