  • Care. Do not use high heat for a long period of time. Do not leave empty pan on a heated burner for an extended period of time. For items that are not dishwasher safe, do not use in dishwasher. Do not use metal utensils on the non-stick cooking surface. The use of scouring pads, steel wool, abrasive cleansers, bleach and/or oven cleaners is not recommended and can scratch or damage your cookware. Bleach will erode the Stainless Steel interior and should not be used on any Mauviel cookware.

  • Maximum temperature. Our products have a superb conductivity, so cooktop knobs or controls cannot be used at their 100% heating power; they need to be used at a 60% capacity. It means on a level of 10, 6.

The layers run up the sides, not just across the base. One litre of water to a rolling boil in three minutes, against seven in a pan with a disc bonded underneath.

Copper conducts about twenty-five times better than stainless steel. That is why the pan answers the dial in seconds instead of a minute later, when the sauce has already gone.

Care

  • Hand washing is recommended for every Mauviel1830 piece. Detergents attack the coatings and the aluminium inside a multi-ply body.
  • Copper tarnishes. That is the metal behaving normally, not a fault. Copperbrill restores the shine in a minute.
  • On induction or ceramic, never go past two thirds of the hob’s power. Overheating is what warps a base and makes food stick, not the pan.

How this piece is made

  • The hand

    Most of what leaves the workshop has been finished by someone who has done it for twenty years. Copper is spun over a wooden chuck, then checked by eye and by ear.

  • The fire

    Bronze handles are cast in sand, filed, and riveted rather than welded. A rivet can be drilled out, which is why a handle can be replaced instead of the pan.

    The workshop photographed in the early 1900s is the workshop still in use. Villedieu-les-Po\xC3\xAAles has worked copper since the twelfth century.
