- Made in France. Mauviel is the leading cookware manufacturer for professional and household chefs throughout the world.
- High performance: The utensils of the M'PASSION collection, as efficient as they are design, embody all the passion and culinary know-how of Mauviel 1830.
- Copper Tatin Mold with tinned interior. Tinned copper, perfect for gentle and regular cooking, renews the pleasure of cooking.
- Thickness 2 mm
- Requires retining over time.
- Care. Never clean your Mauviel pot/pan with bleach. This can lead to irreparable damage. If food sticks to the inside of your pot/pan, soak it with hot soapy water. To restore the shinny copper surface to your Mauviel pot/pan, use our Copperbrill cleaner
- Copper products with tin interiors can't exceed 227°C. Tin starts to melt at approximately 229°C.
The pâtissier’s copper. Unlined copper drives moisture out of fruit fast enough to set a jam without cooking the flavour out of it, and it is the only surface that will take egg whites to a stiff, stable meringue.

Care
- Hand washing is recommended for every Mauviel1830 piece. Detergents attack the coatings and the aluminium inside a multi-ply body.
- Copper tarnishes. That is the metal behaving normally, not a fault. Copperbrill restores the shine in a minute.
- Unlined copper is for sugar and fruit only. Do not use it for savoury cooking or anything acidic that will sit in the pan.
- On induction or ceramic, never go past two thirds of the hob’s power. Overheating is what warps a base and makes food stick, not the pan.

La Manufacture
How this piece is made

The hand
Most of what leaves the workshop has been finished by someone who has done it for twenty years. Copper is spun over a wooden chuck, then checked by eye and by ear.

The fire
Bronze handles are cast in sand, filed, and riveted rather than welded. A rivet can be drilled out, which is why a handle can be replaced instead of the pan.

The same address
The workshop photographed in the early 1900s is the workshop still in use. Villedieu-les-Po\xC3\xAAles has worked copper since the twelfth century.
