Stainless Steel
Multi-ply stainless is copper’s answer to the induction hob, the dishwasher and the acid in a tomato.
Choose stainless if you cook on induction, if the pans go in a dishwasher, or if you want cookware that asks nothing of you.
A single sheet of stainless steel is a poor conductor — it makes hot spots exactly where the burner sits. Mauviel’s answer is to bond five layers into one body: 18/10 stainless on the cooking surface, three successive layers of aluminium through the middle, and a ferritic stainless skin on the outside that an induction coil can grip. The aluminium does the conducting; the stainless does the surviving.
The layers run up the sides, not just across the base. That is the difference between a multi-ply pan and a cheap one with a disc welded underneath: heat climbs the walls of the pan, so a rondeau full of stock warms evenly instead of scorching in a ring. Mauviel’s own figure for M’Cook is one litre of water to a rolling boil in three minutes.
Three collections share that 2.6 mm five-ply body and differ only in how they look and what they are held by. M’Cook is hammered and mirror-polished with cast stainless handles. M’Cook B is the same pan with cast bronze. M’Elite is plainly polished with a non-drip pouring edge.

Villedieu-les-Poêles, since 1830
The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
