The sheet
Copper arrives flat, in 1.5, 2 and 2.6 mm. The gauge is chosen before anything is cut, and it is what the pan will cook like for the rest of its life.

The hammer
Where a shape needs tightening the metal is planished by hand. The marks left behind are the record of that, not a finish applied afterwards.

The same address
The workshop photographed in the early 1900s is the workshop still in use. Villedieu-les-Poêles has worked copper since the twelfth century.

- It is made up, of unique pieces, entirely hand- made; turbot fish kettles, braising pans and fish kettles. They are the ultimate testimonies of a culinary French tradition, always carried forward by the Normandy Company.
- Copper cookware can be used on gas, electric, halogen stovetops, and in the oven.
- Copper with tinned interior. Tinned copper, perfect for gentle and regular cooking, renews the pleasure of cooking
- Care. Do not use high heat for a long period of time. Do not leave empty pan on a heated burner for an extended period of time. For items that are not dishwasher safe, Do not use in dishwasher. Do not use metal utensils on the non-stick cooking surface. The use of scouring pads, steel wool, abrasive cleansers, bleach and/or oven cleaners is not recommended and can scratch or damage your cookware.
- Maximum temperature. Our products have a superb conductivity, so cooktop knobs or controls cannot be used at their 100% heating power; they need to be used at a 60% capacity. It means on a level of 10, 6. Copper products with tin interiors can't exceed 227°C. Tin starts to melt at approximately 229°C.
- Hand wash only. Not dishwasher safe.
- Polished and hammered exterior.
Made the way Mauviel made it in 1830. Turbot kettles, braisières and poissonnières, formed entirely by hand. The tinned interior is the oldest non-stick surface there is, and when it eventually wears, Mauviel re-tins it rather than replacing the pan.

Care
- Hand washing is recommended for every Mauviel1830 piece. Detergents attack the coatings and the aluminium inside a multi-ply body.
- Copper tarnishes. That is the metal behaving normally, not a fault. Copperbrill restores the shine in a minute.
- When the tin lining eventually wears through, send it back. Mauviel is the last house in France still re-tinning, and a re-tinned pan is as good as a new one.
- On induction or ceramic, never go past two thirds of the hob’s power. Overheating is what warps a base and makes food stick, not the pan.
