    The first thing that happens

    Water for coffee, and the hob is at full power before you have found a cup. Induction’s advantage is that it is violent on the way up and exact on the way down — but only if the pan can keep up. A thin base scorches; 2.6 mm of five-ply does not.

    A fast lunch, which is the real test

    Eggs, softly. Induction drops to nothing the instant you turn it down, so the pan is the only thing still holding heat. That is the whole reason to buy weight: the pan becomes the flywheel the hob refuses to be.

    The pan you use without thinking

    Chicken thighs, skin down, twelve minutes untouched. A frying pan on induction wants a base that will not warp and will not develop a hot ring over the coil. Five plies, bonded edge to edge, is the answer to both.

    The sauce, and the copper you thought you could not have

    The fond deglazed with wine, reduced by half. This is the moment copper earns its money, and M’6 S is the only copper here that an induction coil can read — six plies, copper outside, magnetic steel where the field needs it.

    Nothing that needs an interface disc. Everything above works on the hob you actually own, which is a shorter list than the catalogue but a better one.

Copper is not magnetic. For twenty years that meant an induction kitchen could not have copper in it, and most of the trade quietly accepted it. M’6 S was the answer: not copper-plated steel, but six genuine plies drawn as a single body. It costs what that engineering costs.
