Mauviel has worked metal in Villedieu-les-Poêles since 1830. The range divides first by material, because material is what decides how a pan behaves and whether it will work on your hob. Copper answers the flame instantly and is the reason chefs still carry it. Multi-ply stainless gives you most of that response with none of the upkeep, and works on induction. Carbon steel sears harder than either and costs a fraction. Start with the material, then choose the collection.
On induction? Only M’6 S among the coppers will work — it is drawn as six plies with a magnetic layer inside. Every stainless collection and M’Steel work on induction as well. The rest of the copper needs gas, electric, halogen or a hob interface disc.

- 2One pan, or a kitchen?A single saucepan tells you whether you like the metal. A set is cheaper per piece and everything matches, stacks and shares lids.
- 3How thick?1.5 mm copper (M’150) is the everyday gauge. 2 mm (M’200) holds its temperature when you add cold ingredients — that is what professionals pay for.
Every piece is made by Mauviel1830 in Villedieu-les-Poêles, Normandy. The Culinary Equipment Co is the appointed distributor for South Africa. Most pieces are made to order — allow six to eight weeks.
