Choose these if you entertain properly, or if you run a room where the last two metres of service matter.

Mauviel has made service pieces for as long as it has made pans, for the simple reason that French restaurants finish dishes in the room. A fondue set, a réchaud with an alcohol burner, a copper champagne bucket, a seafood tray — these are working tools that happen to be beautiful, not ornaments that happen to hold food.

The pieces here are copper, stainless steel and aluminium, held in bronze or cast stainless. They go from the hob to the table without changing register, and they photograph well, which matters more than anyone admits.

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
