Copper on an induction hob. Mauviel spent years proving it could be done.

If your hob is induction and you want copper, this is the collection. There is no alternative.

An induction coil needs a magnetic base. Copper is not magnetic, which is why for two decades an induction kitchen simply could not have copper in it. Mauviel’s answer was not to weld a steel disc to the bottom — that reintroduces exactly the hot spot copper exists to prevent — but to draw a six-ply blank into a single body: 18/10 stainless inside, three successive layers of aluminium, a layer of stainless the coil can read, and copper on the outside.

The result is 2.6 mm thick, polished, with a non-drip edge and cast stainless handles, and it works on every hob there is. It is the only copper in this catalogue that will.

It also looks like copper, which is the other half of the point. An induction kitchen no longer has to be a stainless one.

A Mauviel craftsman at the bench in Villedieu-les-Poeles

The town has worked copper since the twelfth century. Mauviel opened there in 1830 and has not moved since. Sheet copper arrives flat in four thicknesses and leaves as a pan: rolled, cut, spun over a wooden chuck, planished by hand where the shape asks for it, then tinned or lined with stainless steel.
